While ambidexterity is a classic framework in innovation management to explain the ability of organizations to manage the tension between exploitation and exploration, here it is enriched by a detailed analysis of individual implications, interactions between players and the specific context of social dynamics at work in the exceptional field of high-end pastry-making.
