DESCRIPTION:Adopting an approach based on the study of practices\, Isabelle Bouty\, Rachel Bocquet and Hélène Delacour will share the driving forces behind innovation through a study of the Maison Pierre Hermé Paris in the field of haute pâtisserie. While ambidexterity is a classic framework in innovation management to explain the ability of organizations to manage the tension between exploitation and exploration\, here it is enriched by a detailed analysis of individual implications\, interactions between players and the specific context of social dynamics at work in the exceptional field of high-end pastry-making.
