Innovation Management Seminar

26 March 2025 @ 8 h 30 min - 11 h 00 min

Adopting an approach based on the study of practices, Isabelle Bouty, Rachel Bocquet and Hélène Delacour will share the driving forces behind innovation through a study of the Maison Pierre Hermé Paris in the field of haute pâtisserie. While ambidexterity is a classic framework in innovation management to explain the ability of organizations to manage the tension between exploitation and exploration, here it is enriched by a detailed analysis of individual implications, interactions between players and the specific context of social dynamics at work in the exceptional field of high-end pastry-making. The researchers will highlight three key practices (codifying, testing and visualizing), mobilized on a daily basis by actors who collectively contribute to ambidexterity and innovation in patisserie, based on a case that is as emblematic as it is original.
